Who says comfort food can't be healthy? This sweet potato bake is just as nutritious as it is delicious!
Ingredients
- Serves 6
- Roasted sweet potatoes mashed
- 1/2 tsp salt
- 2 eggs beaten
- 1/2 cup low fat milk
- 1 tsp vanilla extract
- 2 Tbsp brown sugar
- 1/3 cup all-purpose flour
- 1 cup chopped pecans
- 1/4 cup (1/2 stick trans fat free margarine
Preparation
Roasting Sweet Potatoes:
- Preheat oven to 400.
- With a fork pierce sweet potato skin 5-6 times.
- Place on baking sheet lined with foil. bake until tender, 45 minutes to 1 hour.
After potatoes are roasted:
- Preheat oven to 350°.
- In a large bowl, combine the potatoes, salt, eggs, milk and vanilla.
- Pour mixture into a 13 x 9–inch glass baking dish.
- In a small bowl, combine the brown sugar, flour, pecans and margarine and mix by hand until crumbly.
- Sprinkle topping over the potatoes and bake about 30 to 40 minutes, or until warmed through.
